Definition
An enzyme that catalyses the breakdown of starch into maltose (a reducing sugar). Amylase is produced in the salivary glands and the pancreas, and works in slightly alkaline conditions.
What to include in an exam answer
Amylase breaks starch into maltose, not glucose directly. This is a common error. At IGCSE level, you may also write 'simple sugars' as the product.
Example in context
Describe the role of amylase in digestion (2 marks): Amylase is produced in the salivary glands and pancreas. It breaks down starch into maltose in the mouth and small intestine.
