Lipase

Definition
An enzyme that catalyses the breakdown of lipids (fats and oils) into fatty acids and glycerol. Lipase is produced in the pancreas and small intestine, and works best in alkaline conditions created by bile.
What to include in an exam answer
Always state that lipase breaks down lipids into fatty acids AND glycerol, not just 'smaller molecules'. Link to bile's role in emulsification for higher-mark questions.
Example in context
Explain how bile helps lipase to work (2 marks): Bile emulsifies lipids into smaller droplets, increasing the surface area for lipase to act on, speeding up digestion.
