Glycerol

Definition
A small organic molecule with three hydroxyl groups that forms the backbone of lipid molecules. One glycerol molecule combines with three fatty acid molecules to form a fat or oil.
What to include in an exam answer
Glycerol and fatty acids are always stated together when describing lipid digestion products. Both are absorbed in the small intestine.
Example in context
State the chemical test for lipids (2 marks): Add ethanol to the food sample and shake, then pour into water. A cloudy white emulsion indicates lipid is present.
